Not sure how to do this.

I know that I can substitute a batter once the pinch hitter steps to the plate. However, I'd like to be able to make multiple substitutions prior to the inning's beginning, when the coach walks up to me with three substitutions to log.

Is there a proper way to do that? Or must I wait until each subbed-for batter steps to the plate?

Just tap on the current batter to bring up the offensive substitution screen. Then tap each batting lineup position and tap the player that should be batting in that position from the player list. You can do as many substitutions as you like all at one time. Training video 3 at this URL shows how to do this:
