1. I have an at bat that is not credited to my leadoff hitter. There were accidentally ten in the line-up to start the game. It was credited I believe to that person and then the kids tried to switch in the dugout while I was coaching.
Under pitch by pitch it says
grounds out on the throw pitcher #15 BB to first basebman #7 KP
On right it says
Sub NONE

2. How do I add a wild pitch right? Tried changing in the pitch by pitch editing and can't do it.

It sounds like you are asking how to add in a wild pitch, after the fact. Pitch by pitch editor does let you "add in or remove" a pitch . That would disrupt it's internal tracking of ball/strike count for a batter ( needed to know when say 4 balls or 3 strikes ends that batters at bat). Pitch by pitch would allow you to change a passed ball to a wild pitch but not add a new pitch into the count after the fact.

High School team we only bat 9. Accidentally a tenth was added to our line-up. We the kid doing the IPad got to that spot he couldn't get the atbat credited to our leadoff hitter. It was credited to noone in the 10th spot, I'm trying to get the 1-3 ground out credited to my leadoff hitter.

So all the batters are one off from the 10th batter forward or did your scorer skip a batter no out?
I think you can tap the game, tap pitch by pitch, the very top box says game start, tap it. A lineup will show, tap the 10th batter, tap batting =no. This should resolve the batters but we need more info regarding how the one off scoring was resolved in the dugout.

Depending on how 'late' you caught the error, and how clean you want the score book to look after the edits, your best bet may be to undo and rescore the game or manually over ride the stats
The current version of iscore relies heavily on the starting line ups to establish the number of batters so it knows who to bring up next. Once you have gone through the batting order, it does not let you edit the starting line up number of batters mid game and have iscore "re roll" past activities to new line up number. You can add a late arrival go forward, but can't "re roll" past..
Dan's suggestion worked in some prior versions, but does not seem to work in current version in iPad
In the future..
when you set the starting line up to start the game, double check you have who is batting correctly set to "bat = Yes" and bat = no
if while scoring in a game and you notice the mistake before you have returned to the top of the order, you can correct the line up with "misc > show starting line up" to change batters from "bat =yes" to "bat = no".

I can understand the kids in the dugout making lineup mistakes.
I deleted my post you are referring to, the pop up warning is in another scoring program I have used. Sorry for the confusion.
