Is there a way to view the stats for all players? Or perhaps all players in a particular league? I don't want to see them by team, I'd like to be able to see an entire league or maybe just all players in all the leagues ranked by batting avg.

We don't have a way right now to view stats across the entire league, only by team. You can certainly email yourself each of the teams, and create a combined spreadsheet from the exported data (would just be copy/paste to do that). We will be adding more league based reporting capabilities in a future release.
