Add more players to team
I have setup a team with the Quick Roster functionality (12 players...Player A-L). When I arrive at the game, let's say that there are actually 13 or more players on the team. How do I go back and add Player M-?

hopefully you catch this before you bat around.
here is what to do..
while at main scoring screen, use "misc" button...
misc> Show starting line up > home/visitor > add payer > new Player ... player 13 ( M or what ever). double check bat = yes/no as appropriate.

Does that add "Player M" to the "Player Manager" list? I don't want that to happen.

Yes he would show up on your player manager list, because you typed it in (vs quick roster create)
you have hit on a very small subtlety in the way FTM handles quick roster players behind the scene. It appears they flag quick roster players (Player 1...X or Player A...Z) with a special flag to mask them from player manager until such time as their names are manually edited.
If you never edit the quick roster players, then Player M would stand out as visible, while the others Player A-N would be hidden. but if you are only going to rename them once you find out more info, like jersey number or name, then it will make no difference Player M will become new player name.
Some folks try to keep their player manager list "de cluttered" by putting extraneous and extra players in a special "hide these player" league and then disabling that league, so players don't show up in player manager
