We skipped the 8th batter in the lineup and did not catch it after the inning. It was the 3rd out of the inning so to put things back in order in the game, the 9th batter had to bat twice. How do we correct the stats so that the 8th (skipped) batter does not get an PA/AB?

You can go to Game Manager, select the game, view batting stats, then tap the stats that are not correct to override them. You can only override the ones that are not bold. Bold means they are calculated and made up from the other values. For example, AB is bold and made up of:
bat_pa - bat_bb - bat_hbp - (bat_scb+bat_sf) - bat_ci
So you would edit the walks, hit by pitch, sacrifices, and catcher's interference to get the right AB for the batter.
